Storing and Freezing
The cake can be made up to two days in advance, wrapped in clear film or foil and stored in an airtight container. The cake can be frozen for up to three months.
Flavourings
The following amounts are for a 2-egg, single quantity cake, as above. Increase the amounts proportionally for larger cakes. CHOCOLATE Fold 1 tbsp cocoa powder blended with 1 tbsp boiling water into the cake mixture. CITRUS Fold 2 tsp of finely grated lemon, orange or lime zest into the cake mixture.
